Competition Theme : Poultry sublimate

The competition is open to :

Students enrolled in a full-time diploma program or undergraduate program OR be a registered chef studying on a regular weekly basis at a college or university as part of a recognized national professional craft program. They must be between 18 and 23 years old by January 2025.

Part-time work during studies is permitted. The student’s Institute/College/University will be required to provide signed proof of the student’s enrollment.

  • Starter and main course
  • Preparation for 08 people
  • Portions must be plated and sent at the same time
  • Everything on the plate must be edible
  • The dish should be accompanied by a sauce, juice, or broth (maximum 1)

National Competition Sushi Chef’s Cup

The competition is reserved for Chefs de Cuisine with their assistants

  • Nigiri
  • Tunisian Roll

The candidate must create a sushi platter consisting of 12 pieces of Sashimi, 8 pieces of Nigiri, and 1 Roll (Maki or Futomaki or California Roll)

Capture the spirit of Tunisia in the roll and presentation.

Fish provided by the organizer

Rice cooked and seasoned to your preference provided by the candidate

Competition duration : 4 hours

International Pastry Competition

Competition Theme :
Dessert based on dates or date derivatives (fruit, syrup, sugar, date paste, etc.)

The candidate must present two identical desserts with a diameter of 20 to 22 cm for 8 to 10 people, with identical composition and finish.

Flavour fusion is accepted
Available products: dark chocolate, white chocolate, milk chocolate, dates and date derivatives, icing paste, whipping cream, etc.

The black box competition consists of :

Receiving a black box containing agri-food products

With these products, the candidate must concoct :

A dish to highlight Thibar meat, with 3 garnishes and a sauce.

The candidate must present for 8 peoples, with identical composition and finishing.

Everything on the plate must be edible.

Flavor fusion is accepted.

TIMING : 5 hours

Free presentation
Original Side Dish:
Fries, salad, coleslaw, chips, etc.
The side dish must complement the flavors of the burger.
Quantity: Enough for 4 people + 1 photo portion

The Challenge: Competitors report, receive their designated poultry and local ingredients, and have 4 hours for preparation, cooking, and plating.

Judging In Progress: Culinary jury evaluates dishes live for technique, taste, presentation, and hygiene. Scores are compiled privately.

PASTRY

09:30 – 16:00

June 10th, 2026.
The Challenge: Professional pastry chefs have 4 hours to craft two identical, innovative desserts (8-10 servings), focusing on artistry and flavor.

11:00 – 16:00

Judging In Progress: Pastry jury evaluates structural integrity, technical skill, and final flavor profile. Scores are tallied.

BLACKBOX

09:00 – 14:00

June 11th, 2026.
The Challenge: Senior chefs receive a ‘Black Box’ of mystery ingredients, including a designated protein (e.g., Thibar meat), and have 5 hours to concoct a starter and main course for 8 people.

13:00 – 14:00

Critical Evaluation: International jury conducts an in-depth assessment of menu concept, resourcefulness, execution, and final plate flavor.

14:00 – 17:00

June 11th, 2026.
The Results: Official announcement of Gold, Silver, and Bronze medal winners for all Carthage International Chef Cup categories (Black Box, Young Chef, Pastry, Sushi, etc.).
