In keeping with IFSA’s perfectionist policy, this year the committee has set itself the challenge of organizing an international Masterclass and Competition in the field of Pizza.
Pizza has become a socio-economic phenomenon, and this is why we are organizing a Masterclass with the participation of 3 world champions, to enable our candidates not only to compete, but also to learn or perfect new techniques for preparing pizza, while learning from the best the right reflexes in terms of preparation, work hygiene and presentation.

MASTERCLASS PROGRAM AND PIZZA CHAMPIONSHIP
As part of the “International Food Show Africa,” the Italian academy “ACCADEMIA PIZZAIOLI ENOTRIA,” in collaboration with the company Soulja, will organize a MASTERCLASS and a pizza championship according to the following schedule
Concepts of direct dough techniques - spreading and topping pizzas to provide participating pizza makers with a solid knowledge base or to refine their pizza preparation techniques, making them autonomous and confident in their work, and preparing them for learning indirect preparation techniques.
Intended for pizza makers who have already acquired excellent knowledge of direct dough techniques and wish to deepen their knowledge by learning more advanced techniques or refining their level of expertise (POOLISH – BIGA – AUTOLYSIS - etc...).
Each candidate will be judged and scored on a presentation of the Pizza prepared by them in all its stages, from dough preparation to baking and presentation, according to the criteria established by the jury beforehand. This jury will be chaired by Enrico Porzio, one of the iconic figures in the world of Pizza in Italy.

Just as IFSA Africa brings together diverse financial leaders, the Pizza Cup invites chefs and culinary enthusiasts from all participating nations to present their unique twists on the classic pizza. Contestants will battle for the coveted Golden Peel award, judged not only on technical execution but also on creativity and the integration of local African ingredients and spices. This culinary competition underscores the theme of global collaboration with regional flavor, providing a vibrant, sensory experience that complements the serious business of the financial forum.
